Schist is a geological term for a type of minerality (or rock) found in certain soil types. Portugal’s Douro Valley makes famous wines from these varietals, grown in fertile schist soils. These grapes are knowns for their small yields and intense flavors.
This blend is full-bodied with great aging potential. High acidity and strong tannins give it great structure.
The nose has spicy peppery notes and strong brandy-like aromas (like a port). Yet, this fruit forward wine is a bit razzmatazz-tart, with notes of plum, licorice, and pepper. It has a dry finish.
Food: Olives, dried fruits, jams, baguette…. CHARCUTERIE!!! Meats: Coppa, Finocchiona, jamon, mortadella, prosciutto. Cheeses: peach habanero Gouda, Manchego, double cream Brie, aged Cheddar, Ricotta, Cottage cheese, Mozzarella, and fresh goat cheeses.
