Nebbiolo hails from the northern Italy’s Piedmont region. This varietal prefers hillside locations with clay and silt-based soils. Nebbiolo is a “terroir-expressive” variety that picks up more of the earth, soil, and climate characteristics. Therefore, flavor depends on where it is grown. Paso Robles’ unique and distinctive AVAs offer the perfect terroir and climate for this northern Italian varietal.
This wine is full-bodied, has a robust tannin structure, and high acidity. Aromas of bright cranberry fruit, rose hips, leather, and red clay minerality are followed by flavors of cherry, raspberry, coffee, anise and earthy notes.
Food Pairings: Fatty dishes featuring butter, olive oil and nothing too lean. Italian and Asian dishes. Prime rib with creamy horseradish. Pairs amazingly with Bechamel sauce, Burrata, full fat Feta cheese, and Manchego.
